Quinoa and avocado salad, fresh and healthy! Portions: 10 – Preparation time: 20 minutes – Complexity: low INGREDIENTS: Raw quinoa - 300 gr Tomatoes in brunoise - 150 gr Fine verdeo - 100 gr Cooked corn kernels – 100 gr Red pepper in brunoise – 50 gr Green pepper in brunoise – 50 gr 2 lemon’s juice Chopped cilantro – 1 bunch Toasted and chopped cashews – 150 gr Avocado – 2 Process: Wash the quinoa with plenty of cold water at least 5 times. Cook them in plenty water with salt for 15 minutes, or until al dente. Drain and cool in a container with frozen water. Drain again and set apart. Cut the avocado in pieces and process it with a pinch of salt until creamy. In bowl mix the quinoa with the rest of the ingredients, except avocado cream. Fill in ¼ part of a glass with the avocado cream and the rest, to the brim with the mix of quinoa and vegetables. An option is to decorate it with comestible flowers or with moringa.
